Deepgramの遅延は実際にはネットワーク環境に大きく左右されます。私の経験では日本語単一言語なら200-300ms程度ですが、複数言語対応時は若干増加する傾向にあります。本番環境ではWebSocket接続を使い、バッファサイズを調整することで改善できるので、試してみることをお勧めします。実装時にどのモデルを選んでいますか？

For latency-sensitive queries, have you considered caching frequently-accessed customer data, or would your use case require real-time lookups? That approach might sidestep some of the query complexity issues you're worried about.
